Aioli sounds fancy but at it’s core it’s basically flavored mayonnaise. At least for those of us here in the US South.

For a healthier version or if you don’t like mayo, this recipe is made with Greek yogurt and I actually prefer it.

The result is sauce that’s a little tangier and not as heavy, which really enhances the spiciness of the sriracha sauce. Use it as a dip for french fries, on burgers or tuna patties or with sliced veggies for an afternoon snack.

It’s so good. You’ll want to put it on everything. I am already a fan of hot sauce, but I love the creamier version of aioli.

It’s a little more substantial and better for dipping. And I do love dipping! In fact, when I’m not in the mood for spicy, I love this edamame hummus.

Sriracha Aioli Sauce Ingredients

Once your sauce is combined, taste and adjust the ingredients. You may add a little salt or even some minced garlic cloves to create a spicy garlic aioli.

You can also top your sauce with some fresh herbs like parsley or cilantro, a sprinkle of cayenne pepper, paprika, or chili powder. A drizzle of extra virgin olive oil would also be a great topping for this quick recipe.

What is aioli?

Here in the US, aioli has become known as a mostly mayonnaise based dip or spread. However, when it originated near the Mediterranean coast, it was mostly made of olive oil and garlic and maybe some salt. No mayo at all!

So like many things that take on new meanings, the term aioli has changed over time. I’m ok with that though because so far I have never met an aioli I didn’t like!

What can I use instead of mayo in aioli?

While many in the US consider mayo to be the official base of aioli, you have other options!

I prefer using Greek yogurt as my base, but you could also try ranch dressing, vegan mayonnaise or avocado mayo.

Or take it all the way back to the original with a garlic paste and olive oil combo. It all sounds yummy to me!

What types of aioli are there?

These days, you can easily find garlic aioli in restaurants as a dipping sauce for bar food like onion rings, hot wings, french fries, or fried pickles.

It’s delicious and if you ask me, shouldn’t be reserved for restaurants.

If you want to experiment with other types of aioli, here are a few ideas for other aioli recipes.

  • Sriracha mayo aioli
  • Honey garlic aioli
  • Chipotle aioli
  • Chili aioli
  • Garlic ranch aioli (use ranch instead of mayo)
